Carrying out of drying processes for food and biotechnology products in liquid or disperse phase presumes preliminary mechanical processing of raw materials prior to their dehydration. Such technologies include the following operations: mixing, disintegrating of solid inclusions, homogenizing; a multi-component mixture, etc. Efficiency of these operations determines quality of a processed product as well as the kinetics and duration of subsequent drying. Conventional methods of improving such operations are largely connected with use of intensive-power techniques. Thus, a novel approach of enhancement of mass transfer and hydrodynamic processes in disperse media is considered, which can enable essential economy of energy and resources. The main aspects of this approach as well as the performance parameters of some devices, designed on its basis, and advantages of their application in processing operations preceded drying will also be considered in the paper.
